Poha is a famous Maharashtrian recipe… its a healthy breakfast to start the day. I generally make it in the evening with lots of vegies in it.… a simple and easy recipe…. can be made in a jiffy…
| INGREDIENTS | |
| Poha | 150 grams |
| Oil | 2 – 3 tbsp |
| Peanut (Roasted) | 1/4 cup |
| Onion (Chopped) | 1 medium |
| Potato | 1 medium |
| Cauliflower (chopped) | 1/2 cup |
| Peas | 1/4 cup |
| Green Chilli (slit) | 2 |
| Mustard Seed | 1/2 tsp |
| Jeera | 1/2 tsp |
| Hing | A generous pinch |
| Turmeric Powder | 1/2 tsp |
| Red Chilli Powder | 1 tsp |
| Salt | To taste |
| Lemon Juice | Juice of half lemon |
| Fresh Coriander Leaf | 2 tbsp |
METHOD
- Heat oil in kadai, crackle mustard seeds, jeera and hing.
- Add green chillies and roasted peanuts. Stir fry for a minute and then add chopped onion, fry till onion turns golden brown.
- Add turmeric, red chilli powder and salt. Mix well.
- Now add thinly sliced potato, chopped cauliflower and peas. Mix well. Put the lid on and let it simmer till the vegies are cooked.
- Meanwhile, wash poha under running water in a vegetable strainer and set aside for 5 minutes. (Do not soak poha)
- Once the vegies are cooked, add poha and mix well. Let it simmer for 5 minutes and switch off the flame.
- Add lemon juice, mix well.
- Garnish with fresh coriander leaves and serve hot.
