Eggless Fruit Cake

 

For a very long time I wanted to bake a fruit cake something similar to Christmas cake but without egg and rum. I found this recipe interesting and tried it immediately. The cake was really awesome… the texture, sweetness, subtle flavour of the spices, crunchy nuts, chewey berries with a hint of orange… everything was so very perfect. No wonder, that’s why this cake vanished in minutes.

EGGLESS CHOCOLATE WALNUT BROWNIE

Eggless Chocolate Walnut Brownie was on my mind for a very very long time… but somehow I could never get my hands on it.  But this time I decided to bake one for myself on my birthday.  My daughter did the taste test this morning and gave me a thumbs up… I felt really happy as I don’t bake often.  And yes, today I am going to meet my childhood friend, what best gift one can carry on such occasion when you have home baked brownies!!!!  So, here is my Eggless Chocolate Walnut Brownie recipe. 

BANANA CHOCOCHIP WALNUL MUFFINS

 

 

Wow… its been more than a year since I posted my last recipe, thought of starting it again with this cute looking muffins which immediately got thumbs up from my little angle.  I husband wanted me to bake banana walnut muffins for his colleagues at office.  After reading a lot many recipes, I picked up this one from here and make subtle changes. 

CHOCOLATE CAKE WITH TRUFFLE ICING

 

During my daughter’s vacation she kept nagging me to make some cake and choose this one from the Nita Mehta’s cook book.  A very simple and chocolaty cake with oodles of chocolate icing that no kid would be able to resist it.  I used canola oil for this cake.

ORANGE CRANBERRY MUFFIN

My daughter loves orange… and anything that has orange flavour.  She has been asking me to make orange cup cakes for a very long time and today I had the drive to please her.  The muffins came out very good and everyone liked it so much especially my daughter you simply loved the tart, tangy cranberries.  I got the recipe from here, made slight changes and yummy cup cakes were ready to serve.

KHARA (SAVORY) BISCUIT

Bored of baking sweet / sugary cookies, I decided to bake some spicy biscuits… and got this recipe from my friend and it came out so cute, lovely and spicy that every one at my place liked it.  It doesn’t have any raising agent and required very less fat.  My husband prefers spice over sweet and so he liked it so much… crunchy and spicy khara biscuit.

EGGLESS CHOCOLATE CHIP–MOCHA COOKIES

Also called drop cookies, these are probably the simplest cookies to make.  They are called drop cookies because the dough is soft enough to drop off the spoon on to the baking sheet.  Created in the 1930s, these were originally called Toll House Cookies.

STAINED GLASS COOKIES

 

I had these cookies at my friend Sowmya’s (www.nivedhanams.blogspot.in) place and my daughter liked it.  She started pestering me to make them for her.  For a very long time I could not get the coloured candies to bake this cookies.  Finally, one day I found them and baked these cute, colourful looking cookies for my daughter.

CHOCO CRINCKLE COOKIES

We were going on a short family vacation to Wayanad, Kerala with my husband’s first cousin whom we call “mama” and his wife - my favourite manni (sister-in-law). Mama is very fond of cookies and I wanted to bake some for the trip as we were driving down and thought this would serve as in-between snacks.  I took this recipe from my dear friend and my baking guru Sowmya’s blog www.nivedhanams.blogspot.in.  This particular cookie turned out to be wholesome and filling… my little one calls it snow ball cookies and loved it.
 

GINGER BREAD COOKIES

 

 

 

 

I always wanted to try my hands on baking.  I came across this program in TLC named Rachel Allen’s Bake and she made this beautiful ginger bread house with sweets.  I liked it and wanted to bake some for my little one.  It really came out good with a subtle flavour of ginger powder and cinnamon.  Though I wanted to decorate my cookies with icing, couldn’t do so for lack of time and energy.
