Again a simple and easy lunch recipe, can be made in a jiffy.
| INGREDIENTS | |
| Rice | 1 cup |
| Peanut (Roasted) | 1/3 cup |
| Cashew (Broken) | 2 tsp |
| Mustard Seeds | 1/2 tsp |
| Hing | A generous pinch |
| Urad Dal | 1 tsp |
| Channa Dal | 1 tsp |
| Turmeric Powder | 1/4 tsp |
| Green Chillies | 2-3 |
| Curry Leaves | 1 sprig |
| Lemon Juice | Juice of Lemon |
| Oil | 2 tsp |
METHOD
- Cook rice in 2 cups of water in pressure cooker for 3 whistles.
- Heat oil in a pan, throw in mustard seeds and hing. When it crackles, add urad dal, channa dal, peanut and cashew. Sauté till golden brown.
- Add turmeric powder, green chillies and curry leaves. Stir fry for a minute.
- Mix this with rice along with lemon juice. Serve at room temperature.
