I had these cookies at my friend Sowmya’s (www.nivedhanams.blogspot.in) place and my daughter liked it. She started pestering me to make them for her. For a very long time I could not get the coloured candies to bake this cookies. Finally, one day I found them and baked these cute, colourful looking cookies for my daughter.
INGREDIENTS | |
All Purpose Flour | 1 1/4 cups |
Baking Powder | 1 tsp |
Butter | 100 grams |
Powdered sugar | 1 cup |
Egg Replacer | 1 (equivalent to one egg) |
Milk | 1 tbsp |
Vanilla Extract | 1 tsp |
Coloured Candies | As per requirement |
Salt | A pinch |
METHOD
- Pre-heat oven to 160 degree celsius.
- Sift All purpose flour and baking powder (only once).
- Mix egg replacer in 2 tablespoons of water. Set aside for 3 – 5 minutes. Beat well to form a gooey mixture.
- Beat butter and sugar until fluffy. Add egg replacer mixture, essence and milk and beat it well.
- Add the dry ingredients (flour and baking powder) mix into wet ingredients. Mix well with wooden or silicon spatula or with hand.
- Roll it into 1/4 inch thick and cut it with cookie cutter of your choice. Make a small round whole in the centre of each cookie and put candy there.
- Line the baking tray with aluminium foil and place the cookies on it. Bake it for 12 – 15 minutes or until and corners turn golden.
NOTES
- I used Parle “Pop-ins” candy
- I placed 1 candy in the centre of each cookies
- I use “NO EGG” Egg Replacer.
