LEMON RICE

Again a simple and easy lunch recipe, can be made in a jiffy. 

INGREDIENTS
Rice 1 cup
Peanut (Roasted) 1/3 cup
Cashew (Broken) 2 tsp
Mustard Seeds 1/2 tsp
Hing A generous pinch
Urad Dal 1 tsp
Channa Dal 1 tsp
Turmeric Powder 1/4 tsp
Green Chillies 2-3
Curry Leaves 1 sprig
Lemon Juice Juice of Lemon
Oil 2 tsp

 

METHOD

  • Cook rice in 2 cups of water in pressure cooker for 3 whistles.
  • Heat oil in a pan, throw in mustard seeds and hing.  When it crackles, add urad dal, channa dal, peanut and cashew.  Sauté till golden brown.
  • Add turmeric powder, green chillies and curry leaves. Stir fry for a minute. 
  • Mix this with rice along with lemon juice.  Serve at room temperature.
