Poli always remind me of my grandma, how patiently she would make these for the entire family as an evening snacks. She was so great… all grandmas are great. Well, Poli is made for Bhogi fesvital (falling a day before pongal fest) in Tamil Nadu. It tastes good and can be had as an evening snacks. It is typically made with maida dough… but I personally prefer Whole Wheat Flour for the same.
INGREDIENTS | |
Channa Dal | 1 cup (- 1 tbsp) |
Tuvar Dal | 1 tbsp |
Jaggary | 1 – 1 1/4 cup |
Coconut (scrapped) | 2 tbsp |
Cardamom Powder | 1 tsp |
Ghee | 2 – 3 tsp + for frying |
Whole Wheat Flour or Maida | 2 cups |
Turmeric Powder | 1/4 tsp |
Salt | A generous pinch |
Water | For kneading |
METHOD
- Soak channal and tuvar dal together in enough water for about 3 hours. Pressure cook it for 3 whistles. Remove and drain all the water and let it cool down.
- Mash it with hands (you won’t require grinding) add coconut and jaggary. Mix well.
- Heat ghee in a kadai, throw in the channa dal mix and cook till the mixture becomes thick and non sticky. Add cardamom powder and mix well. Let the mixture cool down.
- Knead whole wheat atta or maida into a dough with turmeric powder, salt and bit of ghee. (consistency should be of roti dough)
- Take a plastic / cling wrap sheet, make a small ball of the dough, wet your hands and flatten the ball, put 2 tsp (or a small ball) of the channa dal mix in the centre. Bring the sides to the centre and seal. Again wet your hands and start flattening the dough to make a circle of about 7”.
- Heat chappati tawa and fry the polis applying little ghee and serve hot.
