Thogayals are my husband’s favourite. He like all kinds of thogayal… karuvepillai, kothamalli (coriander), kathrikai (brinjal), paruppu (dal)… and the list can go on and on. Its a very simple and easy recipe made with very few ingredients. Tastes good with hot rice and ghee.

| Karuvepillai | 1 cup (tightly packed) or 50 g |
| Urad Dal | 3 tbsp |
| Whole Red Chilli | 8 |
| Ginger | 1” piece |
| Tamarind Paste | 1/4 tsp |
| Asafoetida | A generous pinch |
| Til Oil | 1 tsp |
| Salt | To taste |
| Water | About a cup |
Method
- Wash, dry and dry roast karuvepillai till little dry and crisp. Keep aside.
- Dry roast urad dal and whole red chilli till the dal turns golden. Set aside to cool.
- Put all the above in a mixer jar along with ginger, tamarind paste, asafoetida, til oil and salt.
- Grind it to a paste adding little water at a time.
- Serve with hot rice and ghee/til oil or can be used as an accompaniment.
