GHIYA (BOTTLE GUARD) KOFTA

Once, my dietician told me that bottle guard is such a rich vegetable for weight watchers.  It directly fights fat deposits in the body and there are so many weight reduction medicine in the market which have bottle guard extract as their main ingredients.  I don’t know how much this is true and kind of believed her and try to include bottle guard in my diet at least twice a week – bottle guard payasam, soup, sabzi and kofta.  Here, is kofta sabzi.

INGREDIENTS
For Kofta
Bottle Guard 400 g
Gram Flour / Besan 8 – 10 tbsp
Hing A generous pinch
Turmeric A pinch
Red Chilli Powder 1 tsp
Cooking Soda 1 pinch
Salt To taste
Oil For frying

For Gravy
Oil 1 tbsp
Jeera 1/2 tsp
Clove 4-5
Cinnamon 1” stick
Cardamom 1
Hing 1/4 tsp
Tomato 3 medium
Ginger 1” piece
Green Chilli 1
Red Chilli Powder 1 tsp
Turmeric 1/2 tsp
Coriander Powder 2 tsp
Salt To taste
Kasuri Methi 1 tbsp
Fresh Coriander 1 – 2 tbsp

 

METHOD

  • Wash, peel and grade bottle guard.  Add besan, hing, turmeric, cooking soda, red chilli powder and salt and mix well.  Divide the mixture into equal size balls.  Will fetch around 12-16
  • Heat oil in a kadai and fry the kofta till golden brown on medium low heat.  You can fry 3-4 koftas at a time. Keep aside.
  • Grind together tomatoes, ginger and green chilli to a smooth paste.
  • Heat oil in a kadai, crackle jeera, clove, cinnamon, cardamom and hing.  Add in tomato puree and cook till the raw smell is gone.
  • Add all the dry masalas – turmeric, red chilli, coriander powder, salt and kasuri methi.  Stir fry for about couple of minutes.
  • Add in about 600 ml of water and cook for about 10-15 minutes.
  • Now, add the kofta, stir for about 2 minutes and take off from fire.
  • Garnish with chopped fresh coriander.
